All Purpose....just flour....supermarket brand, gold medal, Pillsbury's, King Arthur....whatever. But dont' use cake flour like Swans Down. And I didn't invent the recipe...the hint about using the vodka came from someone here....and the method of doing the butter from Julia Child. But I'll take credit for every pie crust I make! Linda C

You can make the sub but the texture will be different with the whole wheat but there's so much chocolate in this recipe you'll probably never notice the difference! (It is my favorite brownie recipe of all that have been p[osted here). Cake flour is sold in boxes by Swans Down and Pillsbury. Cake flour has a higher glutton or protein content to make your cakes fluffier. I didn't use it but I called the company and told them about it. The company out of LA of course claimed it was just fine and dandy to use and that it didn't go near China. The really weird thing about the flour from Swans Down was that the packaging didn't smell funny at all, just the flour.

The two cake flours most common on grocery shelves is Softasilk and Swans Down. They come in boxes the same size as cake mix boxes. If you use an all-purpose flour, use bleached white flour. It is generally milled with a lower protein content than unbleached AP flour. The reason you should reduce the flour by a couple tablespoons is because that flour has a higher protein content and as such...
