Interesting substitute for heavy cream...

I saw this vegetarian/vegan cook, Tal, making a cream soup recipe on Oprah the other day. Since it was a vegan recipe, he couldn't use actual cream...so he made a substitute out of raw cashews. I think it would be a great substitute for us, even if we're okay with dairy, since it's good fats. Haven't tried it yet, but would love to hear about your experiences! Here's the...

You can also make it with pine nuts, water, and a pinch of nutmeg. DH can't tell the difference.

What is a simple vegan substitute for whipping/heavy cream to be used in eclairs?

I'm planning on making eclairs for thanksgiving, but my aunt is vegan, so I need to substitute a lot of the ingredients. I've looked online and cannot find any good replacements for whipping/heavy cream. The cream will be whipped into soft peaks, it will not be used to thicken anything, so taste and consistency on it's own is very important. Any help is greatly appreciated!

they sell vegan whipped cream at organic food stores. should be in with the other non-dairy products (soy milk, soy cheese, etc.)

Substitute heavy cream w/ sw condensed milk?

Got my new Martha Stewart mag yesterday & there's a recipe for cleamintine quick loaf. It calls for 3/4 c. Heavy cream. I'd like to substitute that with sweetened evaporated milk. I just wonder if I should reduce the 1 1/4 c sugar if I do that. wudayathink?
