once we caught them we put them in a 55 gallon barl. of water and let them clean them selves for a few days. chop the head.hang for 1 hour to bleed. then we put the body in a big meatal drum with boiling water. softens up the skin and miscle around the shell. just like defeathering chickens.then you can peel that skin back easier to flesh the meat.

Stay away from the sandwich meats, too high in salt, and lettuce which has no nutritional value. Worms, lean hamburger meat.
