i have a 1911, SN 83xxx, also parkerized. i'd leave it as it is and not wear it out too much shooting it. if you want a gun to shoot, buy a new, modern gun in whatever size and finish you like. i think trying to re-refinish that gun is a mistake. likely to lose most of the markings.
