I saw Ina Garten making a version of this...she roasted the potatoes and leeks (olive oil, salt, pepper) in the oven at 400 degrees for 40 minutes and then made the soup. yum. adds a real depth of flavor. she deglazes the pan after it comes out of the oven w/ white wine and chicken stock (i use veggie stock, think it tastes better). i also add mascarpone or creme fraiche to mine for some more ...
