I'm trying to use up a variety of things in my weekly CSA share, and I'm having my usual problem where I come up with an idea, and then can't find a recipe to make it work! I want to make enchiladas. I was thinking shredded chicken with roasted sweet potatoes and polano/anaheim chiles and jack cheese for the filling. I've had that combo in tamales and loved it, but I'm way too lazy to deal with...

Yes, in one of Rick Bayless's cookbooks is a recipe for Spicy Peanut Mole that has an ingredient list similar to that your sauce (which doesn't sound Thai to me, not with chipotles, cumin, oregano, and new mexican chili powder), I've made that peanut mole several times with fantastic results. The nuttiness and the chipotles just sound like they'd be well-suited to the sweet potato-chicken ...

If you like Tex-Mex I can heartily recommend the CL Chicken Enchilada Casserole . I have made it many times to great reviews and I make it to take on our RV trips as it freezes very well. I do make double the white sauce because as with most CL recipes there isn't enough sauce. O.K.,I get it now, you have 4 tomatillos. No, not a pizza sauce, just google salsa verde and you will get several recipes. It is a Mexican sauce, and unless you like that on pizza, I would use it for green chili or an enchilada sauce, or as a just a salsa to eat with chips.

The masa is mixed with water - 1c masa and 2 cups water and used to thicken the soup. It was so good!! Next time, I will add corn and black beans. Yummm.
