I'd like to start out by saying that this isn't a traditional bolognese, whatever that is. It's rather my interpretation of the dish. Italian Village doesn't have it, and in fact didn't know what it was (It aint just meat sauce). This city has some of the best Italian in the country, where do you go for your best Bolognese!?

I made this last night and thought it was good, but not excellent. The dried porcini and cremini mushrooms give it a nice, earthy taste. The cheese rind thickens it up a bit and the wine adds a nice level of flavor. I diced my veggies in the food processor to save chopping time. Reporting back on the cottage pie...I would rate it three stars out of five. I thought the mashed potato topping was kind of bland and neede more buttermilk than the recipe called for.
