Can you just replace white flour with whole wheat flour in recipes? Do you need to have some white flour in them? Can you split the white flour ingredient to half white and half whole wheat? Just wondering since I know whole wheat flour is a lot better for you.

I don't know much about baking, but I do use whole wheat flour for breading meats, and for gravies, and have had good results. I have used a half wheat/half white ratio for making muffins, and they turned out good as well.

The OP's comments got me to thinking back to my pre-gf baking days... and you know what? You are so right! I remember constantly having to be careful about handling pie crusts, gingerbread cookies, sugar cookies, etc. Oh if only I had known, eh?
