Since moving to the US I've been less than happy with the gluten in my breads. So last week I was reading about adding vital wheat gluten to help provide some boost. Does anyone have an experience with this? I've got a box of Hodgson Mill that I plan to add a bit of to my recipes. Curious if anyone has some tips. Thanks

Up until now the only place Ive found to buy gluten powder was flourbin.com but his has worked out expensive. £1.85 per 500gm, a minimum order of 3kg and a postage charge around £6. are there other names that vital wheat gluten can have? I am hoping its brand specific...I saw vital wheat gluten at my local health food store but its $7.00 for less than a pound...if it might have a different name in the bulk aisle, I'd love to know as it would be significantly less. Thanks!

Vital wheat gluten appears to only be available by mail order in the UK, and I am trying to balance out how much to order against shipping charges. it would help me greatly to know how long I can expect to keep it for? Would freezing it help keep it safely, or is that not a good idea?

So I posted earlier about where to find bread flour and decided to just use all purpose since people said it's okay to use in Canada, and my bread turned out ok but with whole wheat it's quite dense but I really want the health benefit of whole wheat as opposed to white and can't seem to make it fluffier.. Just began experimenting with the stuff. It is amazing! Allows me to create my own meat-like substitutes without paying the ridiculous prices for store bought, frozen, processed fake meat products. It is a very high protein flour like substance that I mix with beans/veggies to make burgers and cutlets and that I make seitan with. It provides that chewy texture to anything. Absolutely amazing....
