Hi, I was reading this recipe for corned beef: http://www.extension.umn.edu/distribu... It mentions substituting sodium nitrate with cream of tartar, has any one done this or know if it works? "A good color can be secured by using 0.4 oz of cream of tartar instead of the sodium nitrate. " Thanks

I've been doing a south beach, low carb kinda thing, and I found a recipe for chocolate meringue cookies that are low, low carb and calorie and look yummy. Problem? I don't have any cream of tartar, which it calls for when making the meringue. Will it work without it? Or do I just have to suck it up and go to the grocery store? Lisa

Joel, I am having problems keeping tartar off my teeth, especially the front bottom ones. I went to the dentist a couple of weeks ago to get it cleaned up but they have reappeared. Well that is what I'm doing today...not making them yet but getting out my recipes and making a list of what I need. If I don't do that I will end up having to go out mid mixing for cream of tartar or something. Anyone else getting ready to do cookies? Or how about cards?
