i don't care too much for tamales. but, i've had a few that are flavorful and that i like. but recently on diners, drive-ins, and dives i saw the solution (for me) to tamales: flavor the masa filling with a pureed chili blend. basically, the person just boiled dried chilis, blended it, and added it to the masa mix. this seems perfect to me. has anyone tried this?

Ok... My craving has been for tamales! And its a bad constant need! I've made them before, but I need a recipe ladies! I really love the pork ones, I've never made those ones... Any one have a great recipe for these? Plus a little refresher on the process? I've got a pretty good idea, but just incase I've forgotten anything... I love tamales but find that not everyone makes them to my taste. I like the firm masa, and often I find places which serve the masa soft, sweet, and corn-mealy which I don't like. Where can I find authentic, homemade tamales? I'm thinking i can probably find them in east LA, and years ago I had a good connection there.

This year I may need to resort in having to order tamales for the upcoming Christmas holiday. Does anyone have any leads to the very best here in the L.A. area?

Anyone know a good place to get a few tamales? I can get someone to make 'em but usually at a minimum order of 12 doz. Really like pork with a little kick. Like a good mess of tamales every once in awhile! Thanks!

Thanks for all the replies! Will give them all a try. I live outside of Sweeny, Will give the lady in Matagorda a visit for sure. A few tamale makes a good quick meal. There are a few ladies are around here that make a great one, just hate to have to buy such a large amount at one time. Thanks again!!

I love all the illegal shopping cart vendors food. Those hotdogs that are wrapped in bacon. The Elotes con todo. The raspados. The champurrado. The tamales. The taco trucks. These people should all get together and commercialize all that. It's the best food at a very good price and they come to your neighborhood.
