Start with a simple addition of turkey...usually it's healthier in the US. Less antibiotics, etc. Go for some pumpkin/cranberries while they're in season. Bags of frozen mixed veggies, corn, carrots, peas. Hummus was an absolute favorite for my ds at that age and still is. I think salmon is ok now too...check with your doctor though.

My husband and I aren't much on sweet potatoes and we have a whole bowl leftover. They are cubed and roasted w/honey, olive oil and spices. Does anyone have any good ideas about what to do with these? I was thinking about pureeing them and trying to make some sort of sweet potato crisp or something... I don't know. I would hate to see them go to waste.

Last night I went to an early Thanksgiving dinner at my Grandma's Assisted Living home. They had the tastest yummiest best sweet potatoes I have ever had in my life. SOOOOOO much better than any I have ever made. They were creamy, fluffy, sweet and perfect. Anyone have a sweet potato recipe that comes out like that? I must eat them again.

I didn't put sweet potatoes into my vegetable medley this year, but I have in the past. I don't find them too hard to cut, but that might just be in comparison to rutabagas.
