I have a brown/mild that was my second AG. I've since diagnosed with some help here that I probably didn't get full conversion and need to buy some iodine. But now I have 5 gallons of stuff that tastes pretty starchy. I'm hoping to get the LHBS this weekend to pick up some iodine, pH strips, etc. and was thinking of maybe picking up some puree or something to throw in. I know this won't get...

OK, we got a Salton automatic rice maker. I wish we didn't, but that's the way it goes. We like sticky rice. The kind you get in a Chinese restaurant that seats about 8 people. Old school, non-PC, long grain, starchy rice. This cooker can't do that. Any thoughts on how to make rice 'our' way???

Went to Asian market today and say persimmons thinking I'd give them a try and sliced the one I purchased open to find the fruit to be... kind of pithy and starchy only to learn that I have to let them ripen first and let the tannins break down a little first. So can I still let the fruit ripen after it's been sliced up or will it spoil?
