Okay, don't laugh at this observation. I had never cooked with romano cheese. This weekend I was trying to make another version of a chicken soup I had made before. Rind is good as explained above, but I eat my rinds, they are so chewy and good. No rind has ever lasted to make it into a pot of soup here. Only rind with wax on it, and you can see the wax so there is no doubt, can't be eaten. Well you could eat it, but wax doesn't taste good. Rind is the best part of well made cheeses! All the flavor is concentrated right there, it is savory!

I know this was post was from forever ago, but I was extremely pleased to see Locatelli in the Albertson's off of San Canyon in Irvine. 6601 Quail Hill Pkwy Edit Irvine, CA 92603-4232 I grew up on Locatelli and was lost without it when I moved to Laguna Beach 6 years ago. My parents brought some out for me when then visited the first time. I Love Locatelli!

There are three easy options that I can think of: 1. Processed shelf stable cheese products like Laughing Cow or a cheese spread. (Maybe Cheez Whiz wouldn't be the effect you were going for. ) 2. A hard cheese, such as a wedge of good pecorino romano. If you have a good cheese counter nearby, you can ask about the hard cheeses. They'll keep them refrigerated, but for a few days, ...
