I love leftover roast beef in hash. Dice some potatoes and onions and fry together in a skillet. Add diced roast beef after the potatoes are almost done. Allow roast beef to caramelize along with the potatoes. Season as you like. Very easy and tasty! Soup is also good.

My father's family was very well off. For Thanksgiving this year, he bought a full prime rib for us, and told us how when he was growing up, Sunday Dinner was a prime rib, every single week. Not just a roast, a prime rib. Yikes!
