I'm back in the Bunker...arrvied at 9PM last night, got about 5 hrs shut eye. Needed to get up early so I throw on a pot of kimchi in the Goat Locker. Once started and brewing, I expect to have a bunch of folks wake up....hungry I expect too.

cucumber kimchi ranks at the top of my list. in terms of the traditional chinese cabbage kimchi, i actually like it when it's freshly made. it's more crisp and does not have a strong flavor. yeah, i'm not korean so my palate is not "normal". mrs. dearbee, being korean, loves all forms of kimchi.

That's exactly what I meant. Thanks for the information. And thanks especially for the clarification regarding the correct terminology. Korean food is something I'm just starting to explore and the local market sells all of this stuff in the same area so I thought kimchi was the overarching term. Will have to do some more research (hands-on, of course)!

Marukai in gardena has a small refrigerated section next to the sushi fish with a number locally sourced kimchi options that tastes homemade. I like the napa the best.
