I know there are a number of threads related to this type of indemnity insurance, but couldn't find one to quite answer my question. Had the mortgage valuation back on a house I'm byuing, and it states that a wall has been removed between the lounge and dining room, and the report says that it assumes all local authority requirements have been complied with. The wall was removed 35 years ago...

I'm pretty sure that they can legitimately (but not fairly) deduct a substantial sum for no MOT as they insure the car's market value at the time of the loss which in your case means with no with MOT, I reckon you might struggle to find many ads for tidy Mk1s without an MOT for more than £1500. The whole system stinks, I doubt that premiums are calculated on the basis that you car is worth...
