I tried lowfat yogurt today, and it went horribly wrong. Part of me knows that the fat in heavy cream is what makes it cook up the wonderful way that it does, but I'm hoping there's some dairy substance I can add to saucey dishes that will work similarly for fewer calories.... 6 Replies ( last )

I've actually never made a risotto with heavy cream before starting work at a new job. The chef doesn't dash a little into a pan, but pours in about a 1/2 cup or more for each serving. So if you are a heavy cream user I'd also be interested in knowing how much you typically use.

I'm planning on making eclairs for thanksgiving, but my aunt is vegan, so I need to substitute a lot of the ingredients. I've looked online and cannot find any good replacements for whipping/heavy cream. The cream will be whipped into soft peaks, it will not be used to thicken anything, so taste and consistency on it's own is very important. Any help is greatly appreciated!

You got me thinking about it and this is what I found... no a little different, but should still work... The dairies near me use carrageenan or other additives in their "whipping cream" to help the cream remain stable. Whipping cream also has a little less fat, in some cases. I prefer heavy, and you can use heavy cream in any recipe that calls for whipping. in the states we have ...

I'm pretty sure that Harold McGee says that stirring butter into a little water reverts the butter to cream, which is why a butter sauce seems creamy instead of oily. So it's probably irrelevant whether you add a little butter or a little cream.

All soft heavy cream, how do I love thee? I've been using that for....8 or so years. HG for me! I don't need to use it all of the time cause it's that moisturizing, my first go with it I was overzealous and it took forever to rinse out lol! I truly love the stuff though.

If its hormonal try taking some b vitamins. I have been taking Natural Factors b complex for the past 8 months and noticed a big difference in mood especially close to that time. I only breakout when I use a heavy cream. B vitamins have to be replenished daily though and you lose more in times of stress but it's definitely a good one to try as its water soluble.
