I am desperately trying to find out what milk substitute won't curdle when cooked at high temperatures. I have 2 recipes I want to make that call for milk and have tried using soy milk. Both require cooking (one even to be kept boiling for a while) in pots and I've found that soy milk curdles. I asked how Comte cheese was made when I was in the Jura region of France. The said it was done purely by the heat process although the wiki entry shows renneting to be part of the AOC stipulations. DAK if it is possible to curdle milk purely by heating and furthermore why would this process be used in preference to using a chemical one. martin

We switched formulas and now my LO is constipated. Unfortunately, we tried prune juice in her formula which seems to curdle. Then she doesn't want to drink it, but who would. Solve me this. You must know it is common sense not to drink juice after milk, or it curdles due to the acidity of the juice, and makes you ill. Fat-free or 1% milk IS good, but it can't replace whole milk when making white sauce (bechimel). The fat that is in whole milk is needed to blend in with the roux. otherwise, the sauce will curdle and look gross.
