Had a fabulous dinner at Deseo last night at the Westin Kierland in Scottsdale. I'd love to replicate the Rainbow Ceviche ... anyone have the inside scoop on the recipe?

I gotta make ceviche for a Spanish project tomorrow. I don't have Spanish until 7th period. Is there a risk of salmonella contamination/food poisoning between the time I hand it over in 1st period and the time it's served in 7th period? I went out for dinner with a friend and was so excited about it.......unfortunetly the food was terrible! We were suppose to start with ceviche....it came out looking like cocktail sauce with boiled shrimp and catfish (had like 3 bites) then when i got my order of cranberry porkchops...they were rock hard with greasy red potatoes and green beans........

I have been to Grandmart, Great Wall Market.. the Latin Stores just sell it in bottle and it's with some kind of sweet juice and I can't use it like that since i will make a savory dish and also ceviche. Another thought--you might want to hit Caribbean Grill for their ropa vieja, or for ceviche try Ceiba or Oyamel; neither has corvina or pulpo, but they at least have non-tilapia/shrimp ceviches like red snapper, rockfish, tuna, etc.
