I absolutely eat up all of Rach's stews/stoups/soups etc...and this one is another winner! So easy but so flavorful. I toast up some crusty bread, break it up in chunks and spoon the soup over the bread and it is sooo good with the soup. I also add frozen peas when I add the green beans for an extra veg. This is a real easy recipe with only six ingredients and three spices, which comes out real tasty! Thought I would share, in case you like to have a pot simmering on the weekends for a few hours. It says 2 cans of great northern white beans..but all I could find was a bag of them..can I use that? also,is the butternut squash SF? wal mart only had one left..is one butternut sqash enough for 4 cups?

For the batch for Liz's I used mushroom stock to keep it totally vegetarian as some people who come to the class are vegetarians. Kathleen1960 over in my ancestral homeland asked me for this recipe and bribed me with the recipe for one of my all-time favorite soups (!!!!!!!!!! !!!!!!!!!!!!), so here it is!! I agree I make alot of Rachael's soups and they are so good I haave tons of her soup recipes and they are all easy to put together will never buy another can of soup again her soups and Stoups cannot be beat they are really flavor packed with very little effort thanks Rachael!!!

You would have to follow the directions on the bag to cook the beans. Dried beans have to be soaked in water before you can cook them. They can't be put right in a receipe like canned beans. I think I have seen Great Northern Canned beans at Wal-Mart in the past. I am going over there this afternoon and will look. I don't eat Butternut squash very often so I don't know a whole lot ...

I don't have a "recipe"....but I cook black beans with a chopped small onion...1 pound of beans and a quart of chicken broth and enough extra water to cover...until the beans are soft....very soft and falling apart. Keep adding a little water as it is absorbed. Puree the beans, adjust seasonings, add about 1/2 cup of cocktail sherry....and serve topped with a dollop of sour cream. I know some...
