Okay, so the brand-new "pre-diabetic" diagnosis has me skipping carbs. So.... I'm looking for creative side dishes that would go well with my baked chicken dinner. I can only take so many broccoli spears and green beans. Looking for something a little more filling, and replaces that starchy thing. Any suggestions?

If I calculate the ounces of a baked potato, the calculation comes out a bit more than what is under 'find & explore.' Which calculation should I use? Thanks!

No, not really. There are a couple schools of thought regarding the baked potato. I have become a convert to the following: 1. Preheat oven to 400 degrees. 2. Pierce potato all over with fork. 3. Brush a little olive oil all over potato. A little goes a long way. 4. Put potatoes on cookie sheet WITHOUT any foil. 5. Let bake for 1 hour. ...

Just re read your second posting...just about all insurances cover visits to a dietitian especially when it involves pre diabetes/diabetes. The sooner this is under control the less money they have to shell out to cover meds. Call your carrier and see who they have on their preferred list. You can still have rice (brown is best), pasta (try for the...

I made it and boy was it good! I did use 4 baking potatoes, but I cooked them like I would for mashed potatoes, just a little less boil time. I would never have thought of the butter and flour part. After the milk, flour, butter was hot and the diced potatoes were in, I took a hand potato masher and went to mashing while bringing everything up to a boil. This left gobs of small ...

Those packaged soups by Bear Creek are pretty good and I've made them in the crockpot before. You just add the liquid and I even add in canned veggies to make it thicker.

This is my favorite dish! I've already prepared my potatoes and just have to reheat them tomorrow and do the marshmallows. I either boil or bake the potatoes and then mash them. Actually I use a potato ricer, but mash if you don't have one. Then I mix in some garlic, salt, orange zest, and juice of one orange. Put in a casserole dish sprinkle with a...
