I agree with BB, if you are only there for 7 days, skip Axum. out of all these places perhaps bahir dar might be best for New Year's eve. Maybe a nice party in the garden of Ghion hotel? And I presume you are flying to all these places, otherwise it might be impossible to cram it all into 7 days.

In our 20 days in Ethiopia we barely had time to get around Gonder, Simien mountains, Bahir Dar, Lalibela and Addis. To try to fit the north into 3 weeks is tough, to squeeze Harar in would mean you would have to fly some sections or spend all of your time finding out how prone to motion sickness Ethiopians are!
