Thanks for the link. That was an interesting read. It would have been interesting if Kristi didn't retire after the 92 Olympics. At the end of the day, I am glad she did because we got to enjoy her outside of the competition. We saw the funny side of her routines. And she got to have a life.

After all the traditional (and some not so traditional) foods of the holidays, I was in dire need of a Tex-Mex fix. Carne Asada and homemade refritos topped with Mexican queso and wrapped in a flour tortilla, smothered in salsa. And yes Matilda, that is cilanto, purely for medicinal purposes!

A warm, soft, flour tortilla wrapped around seasoned ground beef, hearty beans, tangy red sauce, crisp, shredded lettuce, real cheddar cheese, diced onions, diced ripe tomatoes, and reduced fat sour cream. We got regular "roach coach" catering trucks, we got taco trucks with the awesomest ceviche and carne asada, but the truck that's the hippest to eat at right now is the Kogi korean bbq truck. It's just John and I and Max, but Max has already said he just wants cheese, brown rice and peas, and pears. :D I have to go to the store to hunt down a pork roast and some saurkraut, so the options are pretty much endless. We had carne asada burritos last night. Something not to difficult. OP not required. And go.

They are on the menu at the San Deigo Taco Shop. I'm not sure if they have a website, but they have 2 Irving locations, one in Dallas, and one in North Richland Hills. Its a local taqueria chain.
