so, i've been oven-roasting all kinds of tomatoes like oven-roasted tomato fool all week long. my first two batches were chunks and slices of two large juicy varietals. the yellow tangerines took 4.5 hours--3 of those at 200 degrees, 1 at 250, and 30 minutes at 300. the second batch were sliced brandywines and took about 5 hours at 200-250. today i did a large batch of san marzanos (each cut into two long pieces down the vertical axis)....
