Thread: Use for pork bones?

I make a fair amount of sausage and have accumulated some pork shoulder bones. Never really come across any recipes for pork stock...what to do?

You can use pork stock for sauces to accompany roasts or chops, for making dressing/stuffing, use it when reheating leftover pork and keep it moist, mix it with BBQ sauce for extra juicy pulled pork sandwiches, soup (think bean or split pea), substitute it for water when making rice and you could also porkify your mashed potatoes with a bit of pork stock with your milk. Have fun and play around...

For 10 lbs. bones and about 3-4 quarts stock... Preheat the oven to 400 degrees F. Place the bones in a roasting pan that is large enough to hold them in one layer. (If they are crowded, they will steam and not brown evenly; use two pans if necessary.) roast the bones and make brown stock. If you're a southern eater, you know that pork bones are essential for good greens. If you're not a southern eater, you know that your dogs will love you if roast them and give them to chew on.
