I actually made this for dinner last night and am looking forward to the leftover meat loaf sandwiches. I made sure that I made enough - made two large loaves (and I still had sauce leftover as I don't use as much sauce as maybe some people do). Last night I used ground, grass fed chuck - very lean but still flavorful. I used about 3 lbs. gr. beef - used 2 eggs and as I say below in notes...
