We got a set of crappy JA Hinkle (or something like that) knives purchased at Target for our wedding and they don\'t hold an edge for crap.... Anyone have a suggestion for a decent, affordable ($300 range), block set of kitchen knives? I was looking at some of the Victorinox sets but $800 for the forged ones is a bit steep....

I had a couple of Sabatiers when I was a student. Kept the edge very well, (carbon steel) but rusted. And the wooden handles cracked. But that was 30 years ago, I guess they have evolved? EDIT: I have to confess that I bought that Wursthof knife only because of this Thread. Used it once, then went back to the store and ordered a set of 8 ......... I realised why I bought them before. Incredible quality. And cheaper than Global.
How about Patriot Knives? High carbon SS Made in the USA! Any experiences with them? Does anyone know if they use USA made steel? I\'ve decided that I\'m ok with a non-dishwasher safe knife.... The finely sharpened edge of a knife banging around in the dishwasher is not a good thing for sure....

Dan, Make sure you get a several pair of kitchen shears also. The easiest to clean are the ones that come apart at the hinge. I know you have little ones around the house. The shears make quick work of all the meat and veggies we throw on their plate. Having a few pair to use, rotate and clean is a huge time saver when throwing dinner on the table. Indeed Global;\'s vanadium steel knives are light and super strong. they are very hard to beat and I highly recommend them. I\'ve heard good things about Global Knives (Japanese company) from several people, including professional chefs. I believe Anthony Bourdain recommends them in his book "Kitchen Confidential", too. Might bust your $300 budget a bit, depending on how big the set is that you want.
