Thread: Seeking information about: vital wheat gluten

are there other names that vital wheat gluten can have? I am hoping its brand specific...I saw vital wheat gluten at my local health food store but its $7.00 for less than a pound...if it might have a different name in the bulk aisle, I'd love to know as it would be significantly less. Thanks!

Sometimes it is simply labeled 'wheat gluten' or 'gluten'. My Walmart carries it in a small box, made by Hodgson Mills and it is only a couple of dollars. It can be found in the flour section. I also find it in the bulk bins at my health food store, but it is not real expensive there, either.

At my store it's $5 a pound. I guess there's a wide variance in price.

I bought mine for about $7 for a qt jar full. To me it is worth it's weight in gold. Since you only need a teaspoon or two per cup of all-purpose flour to give it enough gluten to make bread. Around here all-purpose flour is $7 for 10 kg. Bread flour is $10 for 5 kg.

Arrowhead and Bob's Red Mill are two other name brands that are fairly broadly available. I also find it at the bulk food store. I understand some health food stores carry it, since it's used to make seitan.
