I think that it's because it's supposed to signify that they all have no hearts

Because the developers are trying to carry a theme to reinforce the organisation.

they just do maybe they like the letter x i dont know maybe its just a coincidense it probly is or maybe they will say why in a latter kingdom hearts game and if you see roxas is part of sora and all they did to change the name is mix it up and put an X in the middle that X has to stand for something if thats what they added and everyone has one in there name maybe because there leaders name starts with X
