The right side of the instrument panel (enginge temp & oil level) are stuck every morning and usually take about 10 minutes to warm up. Normally, I would live w/ this, but since my car is slowing burning oil, I'm afraid I'll come out to my car and all of the oil will be in the parking space and not in my car, so I need that gauge to be working pretty close to 100% of the time. Can someone explain...
First of all, it's not an oil LEVEL gauge, it's oil PRESSURE. Big
difference. Where does the gauge stick? It's normal for the temp gauge to
stay at the bottom for a good 5-10 minutes depending on the ambient temp.

Yes, as mentioned above it is a oil pressure gauge. Not only that it is fake and as soon as the engine starts it should come up and stay at one spot. If it is staying at the bottom, that is a problem. The temperature gauge will stay at the bottom and slowly come up as the engine warms.
Let's concentrate on the oil pressure gauge. It sat outside for about 2 days and today I started it up when it was about 60 degrees outside. Driving through 25mph suburbia, I made it about 6-8 blocks away before the oil pressure gauge shot up from the bottom to about 65%-70% of the way up the gauge. What's the sending unit called? How much to replace? Is there a code to confirm the diagnosis? ...
That would be what we call bad. The oil pressure sending unit is a one wire sensor screwed into the engine very near the oil filter. It is around $20. I would just replace it at this point to eliminate it. No codes because the computer does not monitor the oil pressure. Image borrowed from 2vModular What vehicle. Also what kind of oil/ oil filter? ^^^Do this. If you have a shop do it, have them put a gauge on it before they install the new one to double check the oil pressure. I ask about the filter because certain brands *cough*Fram*cough* are know to have issues on these engines. If it was done at the dealer, it is probably a Motorcraft, which is a great part...
That oil pressure needle doesn't move AT ALL. It stays at the lowest point.
I was under the impression it was low on oil as well. I just got an oil
change with (Motorcraft SAE 5W-20 Premium Synthetic Blend Motor Oil) and
change the oil filer (Motorcraft) a week ago. Should I be doing the same

Not really. Some of the older models (-1997?) you can put a certain sender on it and short out a resistor on the back of the gauge. However the thing is not marked so even then you really have no idea whats up. For all the work, I would just get a aftermarket gauge and tee it off the factory location.

As I have a Limited Edition 05 Sport, there is no room to hang an a/m gauge (full console with shifter like in the M/M) and I do not want a pillar pod as I do not want to give it a danged "Rice Burner" look, I was hoping for a simple mod to fix this. See, this RIGHT HERE is why dealers have such a bad reputation. That's outrageous. Make them give you an itemised bill and explain why it's so high for a job that should not have cost more than $100-150.
seriously, im not cheap at all, but that is a ripoff something fierce. the part is more like 15 or 20 bucks, and should at most be a hour of labor to replace (shop time) .. literally. i could do it in 15 minutes. you will lose a bit less than a quart of oil (whatever is in the filter will drain out)
Might I suggest that you use 15-20W or Heavyduty oil. Since the oil is thicker it won't run out or be burned as fast. At least I can say that I saw a great improvement in my oil consumption: instead of having to buy oil every week, I only get it every 3 weeks, Therefore saving me money.
