Mary Popins. Didn't she rescue someone or other from some headless knights? The Scarlet Witch rescued somebody or other from some villain.

Tamora Pierce's "Song of the Lioness" quartet. More of a young-adult book, really, but shows a strong female character who must figure out how to be both a woman and a knight. Men are depicted as friends and lovers, although the villain is male. Any book by Tamora Pierce, pretty much. The rest of her books have strong female characters as well.

I'd recommend Tamora Pierce too; very strong female leads, especially for a medieval fantasy. Let's see... Dresden Files by Jim Butcher; adult, technically. But not much of adult content, as such. Beautifully written, to boot... but Murphy's only a second character. Still, she's pretty strong. Terry Pratchett, yes. I think someone forgot to mention Angua of the watch. ....can't ...
