Thread: I'm trying a new Chicken Enchilada Casserole recipe tonight.

3 shredded chicken breasts 8 oz cream cheese 1 can cream of chicken soup 1/2 cup salsa a lot of corn tortillas I'm putting everything into the crock pot right now (10:05 MST) so I can throw it together tonight fast and easy. Line a 13x9 pan with corn tortillas, spread chicken mixture on top, layer with corn tortillas again (I guess you can make a few layers) then top with sharp cheddar ...

I love corn tortillas. I make a good enchilada type casserole with sour cream, ground turkey, pepper jack cheese, green chiles and corn tortillas. I might combine your recipe and my recipe. Add in the salsa and chicken from your recipe and use sour cream instead of the cream cheese and use pepper jack cheese instead of the cream of chicken. I think my mother made that casserole before. If it is not the same one it is close. Did you get the recipe from a Campbell's add? My mothers was good. If I made it I think I would add some black beans and corn to the layers. I always add something to dishes like this. Good Luck! I hope you enjoy it.

A friend from high school gave it to me via Facebook. It turned out SO GOOD! Black beans and corn would go really well with it, too. Good thinking! love , P O P

You should! I put medium picante sauce of top of the top layers of corn tortillas, then put a whole bunch of shredded on top. I like the idea of adding black beans and corn like another poster mentioned. love , P O P

Hey POP, I think I might also combine yours and Mobygrape's recipe with some chilli and give this a go as it sounds like a great winter warmer. Sorry to ask a silly question but are corn tortillas the same as tortilla chips? Or are they soft and round? Thanks for sharing this POP. I'm an angel, honest! I think combining them is a DELISH idea! Let us know how it turns out, okay? Corn Tortillas are soft and round, usually found by the flour tortillas. Tortilla chips are crunchy. But I've seen some casseroles that call for broken up tortilla chips so it's definitely something you could/should try. love , P O P

Ah! So do you put the round, soft tortillas in whole and overlap like layering lasagne? I thought that with enchiladas you stuff 'em and roll 'em. Do you think this recipe would work like that (a tex-mex cannelloni type dish) or do you think it'd just be dry? I used a 13x8 pan and used six tortillas for each layer. I'm sure you can put as many as you want in the layers. I will maybe double it next time. And YES! I do think you can roll the tortillas around the chicken mixture! However, you'll need to pour something on top to keep the edges of the tortillas from getting dry. You could maybe use picante sauce OR make extra sauce from the ...

How come you don't have some ingredients? Do you live in a small town? WAIT! You said mum, so are you in England? Mrs. Gideon is in England (I think) so I bet she might have some good recipes, too. Your powers of deduction (the Mum thing) were spot on! Yep, i'm in England so things like crumbly cornbread mixes and Rotel(?) are not here. If I had to make substitutes then it kinda defeats the purpose of a quick bake and I think i'd then rather make a moussaka or a lasagne from scratch. I made one nearly like it, but I have to use flour tortillas since the Mr. has a corn allergy. My favorite enchilada recipe is only for two, but you could increase the amounts. The original calls for ground beef, but I've also used cooked chicken and pork.
