i don't have experience on them, but based on what is posted here, will the 355 rims hold up under you?

yes...the ESI "chunky" are outstanding. they are the only non lock on grip i would ever consider. they do not move at all. they are silicone by the way...same way i like boobs

That is almost exactly like Barny's Flux build and it was a hair under 23. Because of your frame size, I suspect you won't sneak in under 23, so I will guess 23.25 pounds.

Looks like the stock Turner frame box, so I'm very surprised you ended up with any marks on the frame. Since they did not meet your specifications I would ask for $200 off the frame, or they can replace it (at their cost) with the one you had ordered.
Switch to a 2x9 setup and go with 355's instead of Arches. You'll drop under 24lbs and that is super impressive for a large DW Flux. IME you won't be giving up much in durability and if you do your gearing right, you will get rid of a bunch of redundant gears.
