Wouldn't worry about it going off - it'll be fine for years after the best before date. I used to use it as a substitute for sugar in bread making.

I've got about a kilo of this stuff and the jar says it's going to go bad next weekend. Give me something to do with it!
Right now I'm leaning towards protein bars, but I'm open to suggestions. Anything that helps me avoid sitting down with a spoon to finish it off.

Yeah, I thought it was kinda funny that the date was only a couple months after I bought it. Legally, almost every consumable sold in the US has to have a bad-by date (including water), so that makes a lot of sense.
Sugar in bread making sounds pretty interesting...

I get it from the local grocery store, right next to maple syrup and molasses.
