Thread: Broth from Smoked Chicken?

I have a whole smoked chicken we had for dinner last night and I just finished removing the rest of the meat off the bones (I'm going to make chowder with the leftovers) and I'm looking at the carcass and wondering if I can make broth with it. Has anyone ever tried it and what did it turn out like? Or is it too salty/smoky/whatever?

I haven't tried it but I'll bet it would work, especially if you made Chicken Chili with Adobe.

Well, it's cooking now so I guess I'll see Thanks I'll bet it would be good in chicken chili. But dad won't eat that. Maybe if it's good I'll just have to keep it for myself

Reporting back that it made a very good broth. I threw an onion, a potato, some carrots, celery and garlic in to simmer with the bones. I decided to stick it in the freezer to save it for chicken chili or something like that for me in a week or so.

I just read a recipe that used smoked duck and andouille sausage to make a dynamite gumbo. You might want to try that, too.

Reporting back that it made a very good broth. I threw an onion, a potato, some carrots, celery and garlic in to simmer with the bones. I decided to stick it in the freezer to save it for chicken chili or something like that for me in a week or so.
