Thread: BIG BBQ today

15 Racks of St Louis ribs, 5 Pork shoulder butts, and a brisket. Approx 135 lbs of meat. Picked it all up at the commisarry for about $150. Also doing 25 packs ~75 lbs of chicken thighs. My squadron is on detachment in Nevada so we're having a little picnic. Got up at 6 this mornin and started the shoulders and the brisket. Indirect heat for about 7 hours with some Hickory chips over the heat....

Shoulders and Brisket are almost done. Ribs getting ready to go on. Just found out the Officers bought two kegs Gonna be a good day!

How many people are you cooking for?

There was ~100 people. Lots took leftovers so the meat was pretty much gone. Successfull party

Nice. I'm smoking a pork roast right now. As for smokers, unless you are frequently cooking for a lot of people, why buy a fancy one? The cheapo Brinkmann smokin grills do great. You cant fit too much on them, but unless you are cooking for more than 10 people, it doesnt matter. And they are only $40. Cover it when you are not using it and it should last a while.
