So I don't eat them like every day... but I was thinking of dedicating an afternoon to pre-baking a bunch of them and then freezing for later use! that way I have them on hand whenever I want them!? Good idea? Never froze them before but cleo says they can be frozen... so I think I'll give it a shot. Hell, I'm a SAHM to a 3yr old girl, she's crazy but she also entertains herself quite often ...
I freeze my oopsies all the time. They'll thaw out pretty quickly and they're great!! Just be sure to put something in between them or wrap them individually. Otherwise, they'll stick together.
I used to do that all the time too.
And rhetorical or not, no it's not crazy to love the oopsie. I found out a few weeks ago I'm allergic to eggs and I seriously think it's been harder for me having to give up the oopsie's now than it was to give up M&M's when I started LC'ing.
I used to make chocolate oopsie pancakes and freeze them to take to work for breakfast (yes, I ate them every day). No issues, and it was an excellent breakfast!
Well, I just make a double-batch of oopsie batter, and add some chocolate protein powder...to taste...in the yolk/cream cheese mixture. Maybe add a bit more liquid (not much) to compensate for the protein powder. Fold it all together just as in the original recipe and bake in well-greased cake pans (don't overbake). I smooth the top with an offset spatula - makes lovely looking cakes...this ...

Cheryl, thanks for your kind comments. It is true, the bread recipe I gave you would me more appropriate later. Trust me when I tell you, it wasn't until I hit maintenance that I even tried ANY bread substitutes. In other words: bread really isn't a part of the food program, so learn to do without it before you substitute for it. That said, the butter/cinnamon/splenda combo on the oopsies is a good choice.
