IMHO your best betS would be the Hilton Resort in Huntington Beach or the Fess Parker in Santa Barbara.

With what you described as on your wish list, there's no reason to stay anywhere other than Huntington Beach.

You're right, it's Dean. My error. And truth be told, I have a sentimental place for Huntington. I learned there, a looong time ago. Let's just say that priorities and other things evolve... I would like to use my Hilton points to stay for a long chill-out weekend in Southern California the week after Christmas. I am thinking more about an upscale community on the coast. Any thoughts on La Jola, Ventura, Coranado, Dania Beach, or something in the OC icluding Newport? Interested in nice views, dining, beaches and pools etc. Thank you in advance for your advice!

Hilton Gaslamp is a small property with a boutique feel very close to tons of restaurants in the San Diego city center.
