Okay, if there are 10+ creatures in graveyards and my opponent goes to play Avatar of Woe for , then I sac [c]Tormod's Crypt to remove his graveyard from the game (resulting in less than 10 creatures in graveyards now) does he have to sac the avatar? Or does he have to pay an extra 6 or sac it? Or does it just go back to his hand like he never played it to begin with?

None of the above. By the time you know he is playing Avatar of Woe and get the opportunity to respond, he has already finished playing the Avatar and it's sitting on the stack waiting to resolve. At this point, it's far too late; removing the creatures in his graveyard will do absolutely nothing to stop it.
