I think the soundforge equivalent for a mac would be one of the Logic packages. They have Express, Studio, and Pro. I think Express is like $200, but I have heard nothing but good things about Logic.

Are you buying a new or used Mac Mini? Because you can only run Windows on the newest ones that use the Intel chips. No way on the older ones. And some of the used ones might be using the old G4 chips; you'll get sluggish performance trying to run modern software on them.

The "Logic" book that is out makes Logic pretty easy to use (at least I found it to be so, and I'd never used a DAW before). I've had a Mac Mini and a new iMac version (the $1100 edition plus $100 spent to get it to 4GB RAM). iMac is a much more capable machine, and upgrades are much easier on it (they require some pretty annoying surgery on the Mini). I'd suggest looking into it.
