The two tools most mentioned for video conversion are HandBrake (free) and VisualHub ($23). Both can handle multiple formats. Thanks for the Mediacoder recommendation, kmrdeva! There's an iPhone/iPod touch specific version as well, which works quite fast on my work (PC) notebook. My iBook is too slow for this type of stuff.
