I've been listening to a lot of blues lately, but I'd like to expand my knowledge and gain some insight on the genre. What are some of the blues classics, SRV aside?

Muddy Waters, Howlin Wolf, Freddie KIng, BB King, Albert King, Taj Mahal, Robert Johnson, and John Lee Hooker are just a few of many, many classic greats, but they are good places to start.

There's too much too mention. What kind of blues do you like? There are many variations of blues styles ranging from primitive blues (Robert Johnson, Charlie Patton) to modern electric blues (Rober Cray, Buddy Guy). Also, there are dozens of bluesmen (and women) who aren't guitarists but who are vocalists, piano players, harmonica players, etc. Get some albums by Albert Collins, Howlin' Wolf...

There are too many artists to just start naming them off. I'll go with a lot of the above artists to get started. Check out Hound Dog Taylor, he's one of my favorites. Canned Heat too, especially their earlier albums. A copy of Hooker n' Heat will blow your mind, especially the parts with Alan Wilson on harmonica.

If you want to get a broad exposure to the Blues go to Sirius 74. It's got it all. Then pick your favorites from what you hear there.

Lots of good blues listed on this thread. Howlin' Wolf, Muddy Waters, John Lee Hooker, Freddie King, BB King, Albert King, etc come to mind. If you want a change of pace, check out some of the older acoustic blues. Robert Johnson, Charley Patton, Son House, Lightning Hopkins, Mississippi John Hurt, Fred McDowell, Leadbelly and Blind WIllie McTell. Check out pandora.com and type in any of these artists, and they will play something similar.
