I bought my enolmatic used for $150.00. I thoroughly cleaned it and replaced a few o rings in the nozzle. ($2.50). I have only used it once for 22 bottles of soon to be sparkling muscat. I loved it. I hooked up my little spring loaded bottle filling wand to an argon bottle and purged the air out of the bottles and then filled with the enolmatic. Obviously I have no way to measure but I feel the combination of purging and...

8' vine spacing is fine. 3.5-3.75' cordons are easy to achieve. Leave only about 6" between opposite cordons. Too close and it becomes crowded. Too far apart and you are giving up fruiting space. Your idea of a Scott Henry or even a Smart Dyson could work to soak up some vigor. Both will present their own issues WRT to disease, light and air management. I am not a big fan of either for that reason but they are very popular....

I can't speak for others but I adjust my SO2 constantly after MLF then check free SO2 about every 4 to 6 months using A/O. I adjust to the minimum required as needed and keep an accurate account of how much sulfite has been added over the course of aging. I try to follow the standard and keep my total SO2 additions to less than 150ppm over the 3 years I age the vintage. Due to micro oxygenation and the size of the barrel used the SO2...

Every few years the Russian River flows over its banks and floods hundreds of acres of vines. Some muture vines even completely submerge with no damage to the vine or the coming years crop. But they are dormant at the time. If done during the growing season I'm sure it would be a mess. There's even a new winery called Floodgate in an area where flooding is common. They did build the winery on a hill

Ok, this is making me cringe. Why on earth would you buy an oak barrel, and then try to strip out the oak flavor that you paid all that money for? In three years time (or less) most of the oak flavor will be gone naturally. And then I guarantee you'll be sitting there wishing you had some of it back again. Northeast PA is near Erie, which is nowhere near the Susquehanna. I drive through Erie and Northeast from time to time and have relatives in Tunkhannock, which is on the Susquehanna. Probably 300 miles apart. EDIT: Sorry, I was confused. You are talking about the northeastern part of PA. However, I would never plant grapes in a flood plain.

Good for you! I really like the 60 minute...I've had the 90 minute and the 120 minute; both too much for me. There didn't seem to be any benifit to my palate anyway. It seems the 60 minute is as big as I want to go. I'm glad you're enjoying it!

i dont think the filter stripped the wine, just all the handling shocked it for now. let the bottles rest and try again in a few months after they settle down again. bouquet is one of those things that comes and goes in wine with both age and handling (filtering, racking, etc)... it usually comes back after it's had a chance to recuperate.

Alan, you may want to check with the manufacturer. Is your machine crushing first or destemming? If it's destemming first then it should turn slower that that. More like 175 to 225 rpm.

5 imperial gallons is 6 US gallons, or more precisely 6.00475211 US gallons. Why not use your 6 gallon Better Bottle? Whether or not it would be better made to 5 or 5.5 gallons is a question I can't answer. Greg G. (BTW, Google is handy for conversions like this. Just enter "5 imperial gallons in US gallons" and it will spit out the result.)
