We bought about 40 chickens back in the spring, the smaller covhin chickens with the fuzzy feet. They are about half rooster and half hens.

According to my old canning books it is safe. However, I have done it and if you do, make sure you use a wide mouth jar, preferably without shoulders like the old pint-and-a-halfs.
The finished product is like meatloaf surrounded by grease.
