The Grand Canyon really isn't a place that you can just visit for 2 hours, unless all you are going to do is get to the village, stick your head over the ledge, and move on. At that point, I'm not sure its even worth the 2+ hours of extra driving you'll need for the detour off of I-40. Taking 40 is only about 40 miles longer than taking 70. You do need to realize that 40 is far from immune to snow and ice storms. I would make your decision at the last minute after checking weather and road conditions. You also need to keep in mind that I-90 between Cleveland and Rochester is subject to heavy lake effect snow. By far the best way to find interesting places which may not be in your guide books, is to speak to the locals when you arrive at a place. One point of interest which comes to mind is about 20 miles north of Belle Fourche SD, up highway 85, on a side road (old 85), is a small monument in a farmer's field, just off the road, to mark the 'Centre of the Nation'. Just an update: I am now on page 75 of text and photos and, so long as I shut down and reboot my laptop every couple of hours, it is still going strong. I am terrified what happens at the end when you need to upload the thing though... god, if my internet connection dies midway I'm gonna cry!

I like Lifey's idea but just to add to it, could you leave the day before, even if it was afternoon and arrived late in SF. At least it would give you a couple of days to make your way back and have a few hours in SF. This would work better time wise even if SF wasn't a "must do" for you or your Dad and went to somewhere like Monterey before turning around.

I also prefer to have a grill along for the ride. Many times I've pulled over into a rest area and fired up the grill and have had a good fresh hamburger or steak. The most straight forward way to Southern California is to take I-40, which is the way you'd want to go to the Grand Canyon anyway.
For a different route back, you could look at taking I-15 and I-70 up through Las Vegas, Utah, and Colorado, doubling back south to get home to Wichita. That would take you within a short detour of more than a half dozen national park...

If I were you, I'd avoid I-70 and allow for more time (like 9 days, maybe?), but I don't think it's unsafe if you're a cautious driver to take I-40, or perhaps even a more southerly route.

Your itinerary looks in pretty good shape although the one thing that stands out to me is the one night in Grand canyon. Palm springs to Grand canyon is a days drive and to Vegas is 5 hours or so, leaving only a few hours at the Canyon. I would definitely recommend another night and enjoying time in or near to the South rim.

There is no right or wrong answer, as with all road trips it comes down to the individual. In my case I would head to the Four corners region via Albuquerque. Mesa Verde and the Grand canyon could be added to Monument valley with plenty of other choices to hand, depending on time.

Without a student or work visa and a US address, you will have a very difficult time titling and registering a car and obtaining insurance, so a rental is your best option, as long as you are 21 or older. I've not used it but it sounds like you are not the only person to experience this issue, which leads me to believe there is a fundamental flaw in the engineering of this software.
Here and here are links I found where others are using this application having the same problem as you are. The PDF option sounds like it may be viable, however. I know OpenOffice has built-in export to PDF ...
