Right now I'm drinking this half bottle of 2006 Diatom Huber that they included in the goody bags of the Greg Brewer wine dinner at Per Se a few weeks ago. It starts out strong, but by the end of the half bottle I'm finding it a bit much. There is some heavy acidity here, which makes it hard to take in bulk without food. But of course it's not made to drink without food. Still, on the whole, an astonishing (in the good way)...

We were there tonight. Had one Chilean prix fixe plus three menu items. On the Chilean, the dishes were the same but the platings on some were slightly different: the ceviche was in a small glass bowl embedded in crushed ice, which kept the whole thing nice and cold. Any thoughts on canning cactus paddles / nopales? I'd be happy to can them with lime juice. Is there a way to test to see if I can get away with a water bath, which I suspect I can?

I'm sure that I've mentioned it before, but we've been making vodka cocktails with various frozen tropical fruit pureés for a while now.
