Actually, it's fine to dry hop that for a week or 10 days. What I would probably do is just go ahead and rack it onto the hops. You could rack it, and then wait a few days before adding the drop hops, too, if you want to let it clear a bit.

Yeast adapt and your ABVisn't all that far above the range for S-05. Plus, a mead at 1.002 is not totally fermented. There's probably 1-1.5% sugar left. A dry mead can hit 0.994 or less.

I wonder if it had some flaw in it somewhere that you didn't notice. I noticed one of my 6.5 gallons has a tiny pinhead-sized air bubble in the wall about halfway down. It has apfelwein in it at the moment, but it's going in the trash as soon as it's time to rack it.

FWIW, I've found the airlock activity on my fermenter to be a valuable indicator. When the bubble rate slows to about one bubble per minute or less I can count on the fermentation to be nearly complete. This will typically happen in less than one week and sometimes much less than that. My standard practice is to leave it alone for at least several more days then I rack it to the secondary to clear. I always get a good seal on my bucket...

I think corn sugar is just fine although some claim DME produces better
bubbles. I don't really prescribe to the theory. Is there a reason you are

Why OH WHY does it compute mash thickness in L/kg???? My entire recipe is in pounds and gallons. Can it be set for qt/lb??
Okay, so I created a mash... but it is telling me thatI need 3.35 gallons of 155F water to hit a 154F mash temp? I am trying to find where I went wrong, but I am following the manual instructions.

I always oxyclean/ PBW. More often than not, I'll also hook back up to the Co2 and run some PBW through the empty beverage lines.

You might keep checking the classifieds at probrewer.com. I have seen mash tuns for 2 bbl systems for sale. If that is out of your price range, look into usplastic.com. They have large food-safe drums for sale for relatively low $$$. You could wrap insulation around it and drill for drain fittings.
Not sure if either will help you, but worth a look...

This is a grain bed problem moreso than a false bottom problem. I can easily get a gallon/min from my falsie if I really want to.

You can always grow your own hops; lots of brewers here do that. Growing
and malting your own barley is a bit more difficult but some people have
done that with success. Many homebrewers also collect their own water in
rain barrels, reducing the dependence on municipal water. You can even
harvest wild yeast right out of the air!
