  You can password protect your Word documents against opening, which will keep out all but the most determined snoop, but it won't stop anyone you allow access from deleting them. You don't have to download anything. Even if 72 pt is the largest value you can *select*, you can *type* larger values. For example, you can select the current value in the Font group and type in what you want. Just press Enter to apply the new size to the selected text.

Are you really referring to themes? Note that themes were introduced in Word 2007, so you couldn't have created one in Word 2003. In Word 2007, you cannot remove a theme, but you can reset to the theme from the document template: Page Layout | Themes | Reset to Theme from Template.
