For me it is not a question of preferences but of need. I would definitely like my desktop to have x because I need to access sites that have graphical contents. On the other hand, the services on my servers need to use a larger slice of resources so all of them are in run level 3.

Not reallyish. But I don't know exactly you expect the remote box to do? For instance, you could run *MANY* of the GUI tools without needing a full desktop environment remotely.
